DID YOU KNOW? In 2004 Airlie's organic garden supplied over 4800 lbs of vegetables and herbs and edible flowers to the kitchen. Airlie recycled more than 38 tons of waste (aluminum, glass, plastic, paper, steel, newsprint, and cardboard) in 2004. Airlie's Food and Beverage department has instigated a safe seafood program banning Chilean seabass, swordfish and Mako shark, and added organic wines to its wine selection. Environmental Studies at Airlie has surveyed 35 species of waterfowl and 38 species of butterflies on Airlie's campus.
